Broccoli, Hazelnut & Feta Salad
For Frugal Recipe Wednesday I decided to use 2 ingredients from this week’s Aldi Super 6 for 79c (tomatoes & broccoli). It’s quick, easy and good for a healthy diet. I have also included the nutritional benefits. Did you know that broccoli cleanses the liver?
Broccoli, Hazelnut & Feta Salad
Broccoli, cherry tomato, feta & hazelnut salad (from ‘Avoca Salads’). This is a great combination of sweet, salt and the crunchiness of the broccoli and nuts. Lovely as a side dish with chicken.
Ingredients:
- 110g hazelnuts
- 400g broccoli florets – bite sized
- 110g feta cheese, bite sized chunks
- 2-3 tomatoes (the original recipe says cherry tomatoes but what the heck!)
- 200ml French dressing (make your own- mix together in a jar the juice of a lemon, and 3 table spoons of olive oil, one clove of crushed garlic and salt & pepper – put the lid on & shake the dressing, use what you need and keep the rest in the fridge – it will keep for 3-4 days)
Toast the hazelnuts in a hot oven, until skins brown. Tip into a tea towel and rub off the skins. Allow to cool, then put the hazelnuts in a bowl with the broccoli and tomatoes. Gently toss with the dressing and season with pepper. Salt may not be needed, as the feta is usually salty enough. Top with the feta.
Total Cost (based on Aldi Super 6): 79c (tomatoes) + 79c (broccoli) + €2.74 (feta) + €1.69 (hazelnuts) + 50c (lemon) = €6.51 (and there will be some leftover to take in for lunch tomorrow!)

Broccoli is high in Folic acid, vitamin c, B3, B5, betacarotene, calcium & magnesium
Benefits: Anticancer, antioxidant, natural antibiotic and cleanses liver & intestines (good for a Monday-after the weekend!)
Tomatoes are high in calcium, magnesium, phosphorus, folic acid and vitamin C
Benefits: Associated with reduced risk of prostate and breat cancer due to high content of antioxidant lypopene
