Eazy Peazy Chicken Curry

Chicken Curry for €11.29 (serves 4-6)

As we’re getting into winter it’s good to have food that warms you from the inside out (it will keep down the heating bills too!). This is a great recipe because you can use it with leftover chicken!

Prep time - 5 mins, cooking time – 30 mins

Ingredients
•    1 tbsp oil
•    small knob of butter
•    2 diced chicken breasts
•    1 sliced onion
•    3 crushed cloves garlic
•    2ood tsp finely chopped ginger
•    1 tsp coriander powder
•    1/4 tsp turmeric powder
•    1/2 tsp cumin seeds
•    1 tbsp curry powder
•    1 tsp paprika
•    tin chopped tomatoes
•    3 chillies (de-seeded)
•    2 tablespoons of Greek yogurt
•    1 tbsp chopped coriander
•    juice of 1/2 lime

Method
1. Heat the oil and butter in a wok or heavy pan and saute the onion over a moderate heat for 30 minutes, or until the onion is golden brown. Add the ginger and garlic and continue to fry for 1 minute, followed by the coriander powder. Stir to combine and then add the turmeric, curry powder, cumin seeds and paprika.
2. Stir to combine and continue to fry for a further 1-2 minutes before adding the chopped tomatoes, chopped chillies and half of the fresh coriander. Cook out for 15 minutes on a gentle simmer.
3. To the basic curry sauce, add salt to taste, and then add the chicken along with a quarter pint of water. Cover, and simmer gently for about 15 minutes for the favours to infuse.
4. Turn down the heat to a very low heat and then add 2 tablespoons of Greek yogurt (more if you like it thicker and less spicy).
5. Stir in the lime juice and add the remaining fresh coriander.
Serve with rice.
